Captivating and elegant, the 2019 Le Bon Bon boasts alluring aromas of cedar, tobacco and subtle vanilla. Three years of French oak has crafted a well-structured, full-bodied Cabernet that is both soft and lush on the palate, displaying robust black cherry and silky blueberry with a complex cohort of cinnamon, clove, tobacco, and brown sugar. As with many past vintages, the Oakville site continues to produce age-worthy Cabernet Sauvignon, though we believe the 2019 is an abundantly drinkable wine at this early stage.Vineyard Designation

2019 was fashionably late to the party. We had late rain in the Spring which saturated the soils and slowed bud-break. Vigorous shoot growth early in the Summer initially suggested we would get back on schedule, but we settled in for a long cool summer. The Fall stayed remarkably dry, however, and all the grapes were picked and even fermented before the first storms. 2019 saw some of the longest hang-times I can remember. That extra time on the vine helped develop grapes bursting with flavor and translated to juicy, fruit-forward Cabernet Sauvignon.Winemaker Notes
The Cabernet fruit was hand-picked into macro bins, sorted de-stemmed and crushed into tank and cold soaked for 24 hours before being inoculated. Once dry, the wine was racked to barrel and inoculated for malolactic fermentation. It was racked again at the conclusion of secondary fermentation and twice more before bottling. Though it was filtered, owing to its time in barrel, fining was not necessary.Pairings
